    About the Author:

Holly Mendenhall is an outdoor enthusiast, a University of Montana graduate, and author of Find the Money, a book about budgeting. She and her husband, BYU head football coach Bronco Mendenhall, are the parents of three boys. The Holly & Bronco Mendenhall Foundation, which sponsors Thursday’s Heroes, aims to provide inspiration, resources, and hope to ordinary people facing extraordinary challenges.

    In my opinion:

I'm so glad that I was introduced to Thursday's Heroes program. The program is a wonderful charity that recognizes people who are examples of courage and strength. Wow! I love that Holly and Bronco Mendenhall came up with a charity to honor "heroes." Not only is it a great charity but this cookbook was nicely laid out. I loved the creative titles of each section. Although the cookbook doesn't have any pictures, the recipes seemed easy and straight forward.  I'm looking forward to making the Ginger Squash Soup, Veggie Fajitas, McKenzie's Coconut Rolls, Twice-Baked Ranch Potatoes, Coconut Lime Rice, Peanut Butter Cups and the Cougar Blueberry Cheesecake. Yummy! There were a lot of fun recipes and I know you will enjoy this cookbook as much as I did. Plus, the proceeds benefit Thursday's Heroes Charity so keep that in mind.
So, I decided to make the Peanut Butter Cups and I absolutely LOVED them. I actually have made them twice already and I'm sure I've gained a few extra unwanted pounds. But, they were totally worth it. The recipe was quick and easy. Although, I did have to put them in the fridge to cool but the wait wasn't too bad. The second time I made them, I used mini cupcake holders which made it harder to eat just one. Here are a few photos....

Don't you just want to eat them ALL? Well, I sure had fun eating them.
One of my lucky readers will receive a copy of the Cougar Football Cookbook.
