Sweetly Organize IT

Today, I wanted to share with you a story. My mom is an amazing professional organizer.
Her work partner Aggie is pretty much her twin. They work so well together.
Anyway, in 1995 my mom was diagnosed with cancer. Luckily, she is now cancer free.
At that time, she decided to create "Meals for a month" so we wouldn't go hungry.
All we would have to do was pull out a meal from the freezer, thaw it and follow the directions.
Pretty easy right?
My mom is pretty amazing! She made all of her kids (5) a binder with recipes, shopping tips, preparation, meals and notes. She dedicated the binder
 "to anyone who wants and needs to get more organized in your kitchen."
Don't we all need more organization?
Yes, of course we do.
(unless you are Martha Stewart)
There are 24 recipes. My favorite is...
Moo Shu Chicken
Mix 1/2 pound chicken, julienned, with 1 TBSP soy sauce and 1/2 tsp cornstarch. Stir fry 1 green onion, julienned and 1 slice fresh ginger, julienned, for 30 seconds. Add chicken and stir fry 1 minute. Add 1 TBSP soy sauce, 1 TBSP water and 1/2 tsp sugar and remove. Stir fry 1/2 medium had cabbage, julienned for 2 minutes. Add 1/3 pound mushrooms, julienned and stir fry 1 minute more. Stir fry 4 slightly beaten eggs and scramble very fine. Add all together and put in 1 gallon freezer bag. FREEZE. To prepare, thaw, heat through and add 2 TBSP soy sauce. Warm flour tortillas and spread a little hoi sin sauce on ech. Spread with filling and roll burrito style.
Easy right? If you do plan on making this recipe, please do not try and sell the recipe. It is from my mother and I would appreciate it if you use it for your own family.
I actually will double the recipe and freeze half so we could eat it that night and have more another day.
Meals for a month is a real time saver. You dedicate one Saturday morning of approximatly 8 hours and you have 24 different meals. Wow! Isn't that amazing.
